Cornell Industry White Paper Details Sustainability “Road Map” in Hospitality Sector

Profitability Is Key to Willard InterContinental's Far-reaching Environmental Program

Ithaca, NY, August 6, 2008 -- Offering a detailed “road map” for sustainable operation, a new Industry White Paper from the Cornell Center for Hospitality Research details the comprehensive program implemented by the Willard InterContinental Hotel. The report, “Sustainable Hospitality©: Sustainable Development in the Hotel Industry,” is written by Hervé Houdré, general manager of the Willard. In addition to explaining the Willard's sustainable development program, the Cornell Industry Perspectives paper outlines environmental efforts by several of the hotel industry's major companies, including InterContinental, Marriott, and Taj.

Houdré explains that the basis of sustainable hotel operation is a three-part balance, expressed as “profits, people, and planet.” By taking those three elements into account, Houdré suggests, a sustainable development program becomes economically viable, as well as beneficial to the community and environment. As a result, the “road map” for the Willard InterContinental's sustainability program extends far beyond conservation and recycling to conducting programs in the surrounding community and encouraging both guests and employees to consider a healthy lifestyle.

As part of is sustainability program, the Willard InterContinental has switched its electricity source to 100-percent wind energy, has encouraged employees to walk or run nearly 4,300 miles in 2007, has begun a program of planting Cherry trees near the National Mall, and maintaining Pershing Park, which faces the hotel.

“Our hotel will demonstrate the way that sustainable development will be integral to future hotel operation,” writes Houdré. “I see this as a long-term strategy.” Given the length of time that the Willard has been in operation, Houdré believes that the long term is at least the next one hundred years.

Opened in 1850 on the site of The City Hotel, which was built in 1818, The Willard InterContinental Hotel has become known as “America 's Hotel” because every president since Zachary Taylor has stayed or attended functions at the Willard, and the hotel's history has reflected that of the nation. Comprising 332 guest rooms (including 40 suites) and nearly 20,000 square feet of function space, the Willard is located adjacent to the National Mall in Washington, D.C., two blocks from the White House.

Sustainability at the Willard

Willard InterContinental - The Next 100 Years,
A Holistic Program for a Sustainable Urban Landmark Hotel

February 6, 2007, Washington, DC Under the leadership of General Manager, Hervé Houdré, the Willard InterContinental has embarked on a sustainability program for the American landmark hotel entitled, "Willard InterContinental - The Next 100 Years." Based on the triple bottom line of Economic Viability, Social Responsibility and Environmental Protection, the holistic plan is comprised of interwoven sustainable projects designed for a luxurious urban hospitality experience in harmony with social and ecological consciousness. The program has been designed to lay the foundation for future generations of Willard employees, guests and stakeholders. "We envision our invaluable American landmark hotel to be a standard bearer in the industry for its commitment to local, national and international communities," said Houdré.

Houdré, who has written a white paper entitled, Sustainable Hospitality© Sustainable Development in the Hotel Industry, and his team, have put into place a five-year roadmap that defines and quantifies the near-term SD goals for the hotel. The roadmap is divided into four subjects, Governance, Economic Viability, Social Responsibility and Environment. Each subject has associated projects and target years indicating the level of project completion expected in said time. The roadmap is flexible and designed as a working tool, rather than a theoretical matrix, forecasting the savings and impact of our sustainability actions.

Together with a Sustainability Team and a Director of Facilities who acts as the Willard's SD champion, the Willard has embarked on several initial projects encompassing the three "P's" - People, Profit, and Planet. These include:

  • Willard Project Blue - This project has three main components:
    1) Conserving water and reducing detergent use for towels and sheets.
    2) Applying savings to help revive the local Anacostia River through the Earth Conservation Corps Clean-up Project, which targets water pollution and provides youth employment.
    3) Providing opportunities for guests to contribute to our conservation fund. Future savings will also focus on building wells in water-challenged areas both nationally and internationally.
  • Recycling - We compost food and waste material and recycle trash.
  • Energy - Ten percent of the hotel's electricity is garnered from renewable wind electricity, with the final goal being 100%. All bulbs throughout the hotel have been changed to low-impact fluorescents, which though very high tech, look like traditional light bulbs and emanate pleasing light. The bulbs save the hotel money and reduce energy consumption by 9.3% per year.
  • Food Smart - We purchase supplies that are organic, grown locally and raised in a humane ethical manner without pesticides or growth hormones whenever available and wherever possible.
  • Environment - The Willard has adopted Pershing Park located across the street from the hotel. Teams of employees help clean the park - weed the garden and are working together with the National Parks Service and the Downtown Business Improvement District to enhance this once neglected green space so central to one of the most visited areas of the nation's capital.
  • Giving Back - Children's Hospital is recipient of donations of Turkeys (for Thanksgiving) and holiday toy drives. Donations received from the hotel's free December choral music program. Other efforts include: Blood Drives, "Thank You" meals for wounded troops, Marathon runs for fundraising, food drives for DC Kitchen, supply donations to local shelters and a volunteer reading program for children in need.
  • Employee Wellness – A variety of programs have been made available including, smoking cessation, weight loss and bike to work.

Some of Houdré's inspiration came from the nation's 26th President, Theodore Roosevelt, who occupied the White House in the early 1900's when the construction of the New Willard Hotel took place. Roosevelt was a devoted supporter of social causes and one of the nation's first conservationist leaders. In burgeoning 20th century America, the term "Sustainability" had certainly not yet come into vogue, but President Roosevelt's many actions to preserve America's natural beauty and environment and his pioneering work on behalf of children and the disadvantaged embodied the ideals of current day sustainability initiatives.

Cafe du Parc Opens at the Willard

CHEF ANTOINE WESTERMANN BRINGS HIS WORLD-RENOWNED FRENCH FLAVOR TO PENNSYLVANIA AVENUE?S NEW CAFE DU PARC

Washington D.C. March 26, 2007 -- Located in the former Chanel Boutique on Pennsylvania Avenue next to the Willard InterContinental Hotel, the new classic French bistro,"Café du Parc", opens its doors April 2, 2007. The restaurant embraces classic bistro cuisine with moderate pricing ranging from $6 to $19, serving dinner, lunch, afternoon "petit plats" (small plates) breakfast and casual takeaway items.

Café du Parc is overseen by one of Europe?s top Michelin-starred chefs, Antoine Westermann, who supervises the menu to ensure that his vision of French cuisine is appropriately transposed in an American setting. Antoine Westermann chose to dedicate himself and his entire know-how to the research and development of new adaptations of French cuisine. This alliance has created a unique symbiosis in which French cuisine is adapted to American tastes and habits. Thus, the traditionally generous American portions are reflected in this particularly French approach to vegetarian dishes, dishes that have a strong esthetic value as well as a good cost-to-quality ratio. Café du Parc will be led by Willard Executive Chef Daniel Kenney and Westermann?s hand-picked brigade trained by the master in Paris.

For Antoine Westermann Café du Parc was a challenge he could not resist. "Combining the unique tastes of France and the all American demand for choice, quality products, as well as quantity and fast service, was my goal when I started this project," says Westermann. "French cuisine is usually a synonym for expensive dishes and small portions? I wanted to demonstrate that it is absolutely possible to marry the tastes of France to American culture where they both meet: their generosity."

Menu items for Café du Parc include, Le pâte en croûte façon Antoine Westermann, (Antoine Westermann?s Pate in a crust), Les quenelles de brochet (Pike dumplings) Les paupiettes de veau (stuffed veal fillet bundles) Le confit de Canard (Duck confit) and vegetarian options like, La cocotte de légumes braisés, champignons de saison et aux croûtons à l?ail (Braised seasonal vegetables, seasonal mushrooms and garlic croutons), and Les tomates farcies aux legumes (vegetable-stuffed tomatoes.) In addition to the savory offerings, Café du Parc boasts an array of French deserts like the delicious, Les oeufs à la neige (Floating Island) and La tarte aux pommes à l?Alsacienne (Alsatian apple tart). Authentic house made pastries will also be available for carry out.

An open kitchen highlights the upper level Café du Parc restaurant which seats 96 people and is accessed by a grand staircase and an elevator. The welcoming setting is vibrant with both banquette and individual tables for dining. During the warm DC spring and summer months, Café du Parc features Parisian-style outdoor seating where guests can sit, relax and enjoy the surroundings and the offerings of the café.

About Antoine Westermann
Chef Antoine Westermann is one of the most celebrated chefs in France. Apart from the Haute Cuisine that has earned him three stars, Westermann expresses his creativity, steeped in the traditions of Alsace, in recipes for his two sandwich bars in Strasbourg, and by his generous vegetable cookery in his Paris restaurant on the Ile Saint Louis, "Mon Vieil Ami." He also emphasizes the Franco-Portuguese essence at his, "Fortaleza do Guincho" restaurant. At his highly popular Drouant restaurant in Paris, Westermann revisits appetizers "à la française", putting the focus on quality products with a predominant emphasis on vegetables.

A SWEET TREAT FOR THE FALL Afternoon Tea Menu at the Willard InterContinental

Washington DC, September 18, 2007 Washington DC's most delicious midday indulgence, Afternoon Tea in Peacock Alley presents its new fall menu at the historic Willard InterContinental! The Tea provides guests premium seating at elegantly appointed tables set in the hotel's Peacock Alley -- one of Washington's prime locations to "stroll, strut, see and be seen" for nearly a century.

The Willard's prix fixe classic Afternoon Tea, is served seven days a week from 2:30 p.m. to 5:00 p.m. Priced at $35.00 per person and $45 with a glass of champagne, afternoon tea features the presentation of a broad spectrum of Mighty Leaf loose tea held in vials with descriptions of each flavor, followed by individual teapots full of the aromatic selections. Guests can also enjoy the gentle tones of a live harpist as they dine on a three-tiered tray of delectable sweets made fresh daily by Café du Parc's Pastry Chef, Morgan Bomboy.

Chef Bomboy comes to the Willard by way of Paris where he's mastered his craft at such properties as Hotel Le Raphael located near the Champs Elysee, and at the Hotel Royal Riviera near Nice where he worked as Demi Chef de Parti. His delicate and irresistible pastries include: Mango Pate de fruits (fruit squares with the delicate taste of mango), Kiwi gelée on Joconde bisquit (a light kiwi flavored gelatin on an almond sponge cake, named after the Mona Lisa), Manjari Chocolate mille-feuille (a chocolate biscuit with a thin chocolate square layered with chocolate mousse and topped with chopped pistachios), and a Fruit Sable (a delicate cookie filled with light pastry cream and fresh berries). The delicate tea sandwiches have been hand crafted by the Willard InterContinental's award winning Executive Chef Daniel Kenney. A selection of Champagne and sparkling wines are available by the glass. Valet parking included. For information and reservations, call Tel. 202-637-7350.

The Willard's stately Peacock Alley has long been the place in Washington to see and be seen. FBI trainers have even utilized the glamorous walkway to instruct operatives on the subtle art of "shadowing" people. During the 1980s restoration of the Willard, the border of Peacock Alley's intricate floor design was preserved through the installation of over a million mosaic tile pieces. The grand hall's marble doorframes were refinished and the beaux-arts moldings repaired. The new marble thresholds replaced those that were missing and the promenade's pilasters and marble stairs were returned to their original grandeur. From its inception to this day, the Willard has been a major force in the social and political life of Washington, D.C. and the Peacock Alley promenade continues to charm guests from America and around the world.

GOING GREEN BEHIND THE WHEEL! HYBRID VEHICLE NOW AT THE WILLARD INTERCONTINENTAL

Washington DC, September 18, 2007 As part of the Willard InterContinental's ongoing commitment to sustainable development, the luxury downtown hotel will now offer guests an alternative mode of transportation in the form of a 2007 Toyota Camry four-door Hybrid sedan.

The program, which began on September 1, is first of its kind to be offered in the DC hotel market. It offers the elegant black with gray leather interior hybrid vehicle on a fulltime basis, from 8:00 a.m. until 8:00 p.m. Monday through Friday. The car is stationed outside of the hotel as an eco friendly alternative to the standard town car or taxi. Hybrid service is available on a first come, first serve basis for hotel guests only at a minimal fee. The car is available for anywhere within Washington DC, and to Regan and Dulles International Airports. Service is also offered to Virginia and Maryland.

The Camry Hybrid utilizes a four-cylinder gasoline engine, and its fuel economy is 40 miles to the gallon in the city and 38 miles to the gallon on the highway. The power steering, brakes, and heater/air conditioning are all electric, which allows the car to run on the electric motor.

The hybrid vehicle program is just one of the many environmentally conscious choices the hotel has made since embarking on a sustainability agenda entitled, "Willard InterContinental - The Next 100 Years." Based on the triple bottom line of Economic Viability, Social Responsibility and Environmental Protection, the holistic plan is comprised of interwoven sustainable projects designed for a luxurious urban hospitality experience in harmony with social and ecological consciousness. The program has been designed to lay the foundation for future generations of Willard employees, guests and stakeholders. We envision our invaluable American landmark hotel to be a standard bearer in the industry for its commitment to local, national and international communities,. said Herve Houdré, General Manager.

WILLARD INTERCONTINENTAL, FIRST HOTEL IN THE NATION'S CAPITAL SUPPORTED BY 100% WIND POWER

October 3, 2007, Washington DC -- The Willard InterContinental, Washington DC's premiere historic luxury hotel, is now powered by 100% wind energy. Pepco Energy Services, a subsidiary of Pepco Holdings, Inc. (NYSE: POM) and a leader in renewable electricity, supplies the 332-room landmark hotel with 100% wind renewable energy credits, making the Willard the first urban luxury hotel in the United States to be fully supported in this sustainable manner.

Pepco Energy Services provides the Willard InterContinental Washington with nearly 7.1 million kilowatt hours of 100% wind renewable energy certificates. The Loyalton Group, an energy risk management firm in Washington, D.C., facilitated the contracts, under which Pepco Energy Services will supply renewable energy certificates from Sterling Planet. Each treatment starts with a soothing Hydrotherapy Bath that relaxes, warms and detoxifies the body. The champagne which is added to the bath helps tighten pores and firm the skin. After the bath, guests can choose from either a one hour Champagne massage or a half hour Champagne body treatment.

After the hydrotherapy bath, the Champagne Massage option features champagne-based massage oil from Bath Bloomers that is high in antioxidants, prevents skin damage and leaves the skin looking youthful.
